Here the wine matters, and the cooking follows it. Around a Brunello we set the right meats, slow cooking, hand-made pici, Pienza pecorino aged just so. We build the menu and then tune it to the bottles you will open.
If you like, we add a guided tasting of the Montalcino reds to the evening, so the wine becomes the thread of the dinner.

We lay the table where the view is best: a terrace over the hills, the garden of a country house, a table among the olive trees. We cook on the spot and leave everything as you left it. What stays with you is the landscape and the time with your guests.
